TRADITIONAL BUTTER MILK

 
Hi Everyone,
Whatever sweet drinks we take for summer nothing can beat the taste of a traditional spicy buttermilk.
My mum use to prepare this for us during summer and though the buttermilk will be very hot in taste still it reduces the heat immediately. Also Buttermilk is very economical and everyone can prepare it.
There are various methods in preparing butter milk but this is traditional.

The recipe is as below,
INGREDIENTS:
Curd                 1 cup.
Water              ¾ cup
Green Chillies – 1 or 2 nos
Curry leaves         – a sprig
Coriander leaves – a bunch
Ginger                    – 1” piece
Salt                          – as required.
PREPARATION :
1) Crush green chillies , curry leaves , coriander leaves and ginger slightly ( don’t grind it to paste , crushing is enough)

CRUSHED INGREDIENTS

2) Add water and Curd in blender and blend till the mixture becomes forthy.You can see the butter floating on the top of the butter milk,In that case remove the butter (Incase of packet milk you will not get any butter J).
 
3) Once done pour the buttermilk in a cup,add the crushed ingredients , salt and mix once and refrigerate it for 1 hour or more.

4) After refrigeration filter the buttermilk and serve chilled.
 
NOTES :
1) I used my pestle and motor to crush the ingredients, you can use your blender but crush only once.
2) If your curd is too thick you can add more water as per your requirement.
3) Be generous in adding curry leaves, coriander leaves it gives a nice flavor.
4) The more time you soak the masala the higher the tastier your buttermilk will be.
