KEERAI BAJJI / GREEN LEAVES BAJJI

Hi Everyone,
My mum is a great cook and she has so many innovative ideas in cooking..She don't keep recipe notes and she cooks everything just like that with whatever ingredients she have in hand but the final dish would be always amazing!!
When I went to my home town for a short vacation she thought me so many easy recipes and I returned home with a bunch of recipes and photos .Iam very happy to share the recipes with you too.
This is the first recipe from my mum’s recipes , KEERAI BAJJI . This is such an easy and healthy snack even green leaves haters will also like this snack and good for kids too ,you can use any green leaves of your choice but it must not have bitter taste.

The recipe is as below,
INGREDIENTS :
Green leaves – 20 leaves ( bigger in size)
Bajji mix  - ½ cup ( I used Achi bajji mix)
Cooking soda – ¼ tsp.
METHOD :
1) Wash the green leaves and keep it aside for 30 mins.This is done to make the leaves stiff so it will be easy for frying.
2) In a bowl add bajji mix , cooking soda and mix well in hand without any lumps.
3) Add water to bajji mix little and little to make it like dosa batter consistency.
4) In a wide kadai heat oil , Now take each leaf ,dip in batter and deep fry in oil.
5) Fry the bajjis till it turns golden yellow ,when done remove from oil and drain them.
6) Enjoy hot bajjis with your favorite chutney or as it is.
NOTES :
1) I used Thandu keerai(amaranth spleen) , you can use any green leaves of your choice but make sure it doesn't taste bitter,as bitter keerai is not fit for making bajjis.
2) In case you don’t have bajji mix you can even make it using Besan flour , the recipe is as below,
Besan flour – ½ cup
Asafoetida – 1/8 tsp
Salt – ¼ tsp
Chilli powder – 1 tsp
Cooking soda – ¼ tsp.
Mix everything well and add required water to make batter.then dip the green leaves to the batter and deep fry in oil.

WARM WATER CHAPATI / BEGINNER GUIDE FOR SOFT CHAPATI
