RED EGG GRAVY

Hi All,
RED EGG GRAVY!! We love egg and tomatoes , we can have egg and tomatoes in any form .
So what if the combination of egg and tomatoes !! wooww..the combination was amazing and yes it is appetizing too.
I made this gravy for spicy poori last week , I immediately fall in love with the colour and texture of gravy , now this gravy has came to top list in our weekly menu.
The recipe is so simple , to get the bright ,attractive colour pls use well ripe tomatoes.
My loving recipe is as below,

SERVES : 5 members.

INGREDIENTS :
Egg – 5 nos
Fennel seeds – 1 tsp.
Cinnamon – 1 1/2” piece.
Cloves – 3 nos
Cardamom – 2 nos.
Green chillies – 2 nos.
Turmeric powder – 1/4 tsp.
Chilli powder – 2 tsp.
Coriander powder – 1 tsp.
Garam masala – 1/2 tsp.
Ghee / butter or oil – 2 tsp.
Coriander leaves – a bunch

TO GRIND :
Tomatoes – 2 nos ( medium sized).
Onions – 2 no ( big).
Garlic – 5 pods.
Ginger - 2” piece – 1 no.



PREPARATION :
  1. Hard boil eggs , remove shells ,slit them and shallow fry in 2 tsp of oil / ghee till golden brown ( save the oil for rest of the cooking).
  2. Grind onions , garlic , ginger to fine paste without adding water.
  3. Boil tomatoes in 2 cups of water and grind it to fine puree(I cooked in cooker for 2 whistles).
  4. In a same pan heat balance oil and add fennel seeds , cinnamon , cloves ,cardamom and saute till golden brown and aroma comes.
  5. Add chopped green chillies and saute till it changes to pale colour .
  6. Add ground onion , ginger , garlic paste and fry till raw smell leaves of onions leaves and the mixture starts changing to dark colour.
  7. Now add our spice powder – chilli powder , turmeric powder , coriander powder and fry for a minute till the mixer mixes well and forms a mass.
  8. Add tomato puree and keep the flame in medium and boil well till the gravy thickens and raw smell leaves from tomatoes.
  9. Add 1 cup of water and boil keep the flame in high and boil till required consistency.
  10. Finally add roasted eggs ,garam masala give one minute gentle quick mix ,garnish with coriander leaves .
  11. When eggs are well coated with masala , remove from flame and serve with Chapati , poori ,pulka , roti , dosa, Aapam,Bhatura of your wish.I served with spicy poori.
