KUBUS / CURD POORI

Hi All,
KUBUS.Few years before one day my mum made this snack for me with curd and told this is curd poori and it tasted yummy too.Later once I went to Hyderabad to my sister's house ,she told she recently learned a great recipe from her neighbour and it is kubus.She made the same poori which my mum prepared but with different name 😊.Name differs from state to state but dish and taste remains same.
Now I thought of making this snack for my kid as it is very easy and also fool proof recipe.
The kubus came out very puffy , soft and with mild sweet ,definitely it is a wonderful snack for tea.
Try and let me know how it turned it to you.The recipe is as below,
INGREDIENTS :
Curd – 1/4 cup.
Salt – a pinch.
Sugar – 1/4 cup.
Baking soda / cooking soda – 1/4 tsp.
All purpose flour / Maida – 1 cup.
Oil – for deep frying.


METHOD :
  1. In a bowl add curd , sugar , salt and beat well till sugar dissolves and starts foaming.
  2. Now add cooking soda and mix vigorously , the curd will start bubbling and foams up to 3/4 cup.
  3. At this stage transfer the curd mixture to a wide bowl and add maida to it and mix .
  4. The mixture will form paste consistency.
  5. Close the vessel and let the dough rest for 6 hours.
  6. After 6 hours ,the dough will be like sticky as in picture.
  7. Heat oil in a kadai.
  8. Dust the working space with some maida , take small sized balls from curd dough dip in maida once (this helps you to roll the dough without sticking).
  9. Place the dough over the dusted space and roll it to thick circle ( like pooris).
  10. Drop gently in hot oil and boil in low flame till it puffs up well.
  11. Flip the kubus to next side and fry till puffs up and turns golden brown.
  12. Remove from oil and drain oil completely.
  13. Same way fry the entire dough and serve hot.
  14. The Kubus will have mild sweetness and goes great with a cup of tea.
NOTES :
  1. Use good quality curd for better results.
  2. During rolling roll gently with patience.
  3. If you are sweet tooth , increase sugar level.
