ROASTED BANANA CARAMELIZED PANACOTTA!
My baby loves Banana in any form .Now in summer , her vacation also started so I wanted to make something interesting for her vacation that's too with fruits , so made this Banana panacotta.
The name panacotta sounds different but the taste was awesome , silky , yummy and of course with banana flavour.
Try this panacotta for this summer for kids party and enjoy .The recipe is as below,

INGREDIENTS :
Riped Banana – 3 nos .
Ghee – 1 tsp.
Gelatin – 2 tsp.
Water – 1/4 cup.
Whipping cream – 1 cup.
Sugar – 1/8 cup.
Vanilla essence– 1 tsp.
Nutmeg powder – 1/8 tsp.

FOR CARAMELIZING :
Sugar – 1/8 cup.
Water – 1 tsp.


METHOD :
  1. For caramelizing add sugar , water in a pan and heat in medium flame till sugar dissolves.Now keep the flame in low and boil till sugar syrup turns golden brown.
  2. Immediately pour the caramel into greased moulds to cover the bottom of moulds.Let them sit for 10 mins to set.
  3. In a pan heat ghee and add chopped bananas , fry in medium heat till bananas turn very soft and starts browning.
  4. When bananas turns brown ,remove from flame and grind it to fine puree.
  5. Soak gelatin in water for 10 mins or till it dissolves completely.
  6. In a pan add whipping cream ,sugar and boil in low flame till sugar dissolves.No need to over boil just boil till sugar dissolves.
  7. Now mix everything together , add banana puree , gelatin mix , vanilla essence , nutmeg powder to cream mix and mix well.
  8. Pour the mixture to caramelized moulds and refrigerate for 4 hours or overnight.
  9. Once set remove from refrigerator and invert to serving plates and enjoy.
    NOTES :
  1. Take care in caramelizing , Don't stir just lift from flame and swill slightly .Don't burn to very dark brown as burnt caramel will not give golden colour and also tastes bitter.
  2. Caramel must be handled carefully , caramel injuries are very serious so don't touch in hands and keep away from children.
  3. Caramel will set quickly so pour them immediately to moulds.
  4. Whipping cream can be replaced with heavy cream too.
  5. Make sure bananas must be well ripe.
  6. If the panacotta does not leave moulds , then just keep the base of moulds in hot water for a minute and run knife around the edges or keeping in running water for a minute also helps.
