PEPPER CHICKEN GRAVY

Hi All,
My husband is fond of Pepper chicken ,Whenever we visit a restaurant, pepper chicken is the only dish which my husband orders without fail.I tried so many recipes for pepper chicken and this recipe is so perfect that I got actual dark colour like restaurant ones.
The secret behind the perfect pepper chicken is the fresh spices , so always add fresh ground pepper.

The perfect restaurant style Pepper chicken recipe is as below,

INGREDIENTS :
Chicken – 1 kg.
Onion – 1 big.
Tomato – 1 medium.
Turmeric powder – 1/4 tsp.
Chilli powder – 1 tsp.
Coriander powder – 1 1/2 tsp.
Chicken masala – 1 tsp(optional).
Cumin – 1/2 tsp.
Mustard – 1/4 tsp.
Curd – 2 tsp.
Salt – as required.
Curry leaves – a sprig.
Gingelly oil / coconut oil– 1 tsp.

TO GRIND :
Onion – 3 nos (medium ).
Ginger – 1” piece – 2 nos.
Garlic – 6 pods.
Cinnamon – 1” piece – 2 nos.
Cloves – 6 no.
Dry red chillies – 6

TO DRY ROAST AND POWDER:
Pepper – 1 tsp.
Cumin – 1 tsp.

METHOD :
  1. Chop onions , tomatoes to small pieces.
  2. Dry roast Pepper and cumin till splutters and grind to fine powder , keep it aside till use.
  3. Grind our grinding ingredients ( onion , ginger , garlic , cinnamon , cloves , chillies ) to fine paste with little water.
  4. Heat oil in cooker and add mustard , when mustard starts spluttering add cumin , Onions and saute till translucent.
  5. Then add ground masala , tomatoes and boil till masala thickens and tomatoes turns mushy.
  6. When oil starts leaving on sides ,add our spice powders ( chilli powder , coriander powder,turmeric powder,chicken masala ( if needed)) ,curd,salt and fry for minute.
  7. Now add chicken pieces , mix well ,close the cooker (no need to add water ) and boil for 3 whistles.
  8. Once pressure subsides , open the cooker and if the gravy was too watery , boil till required consistency.
  9. Finally add pepper cumin powder , curry leaves and boil for 3 more mins.
  10. Garnish with coriander leaves and remove from flame.
  11. Serve hot with rice , chapati , pulka , aapam ,dosa of your choice.
NOTES :
  1. Use fresh ground pepper , cumin powder for best results.After adding cumin,pepper powder don't boil too much.
  2. Chilli powder is used to give appetizing colour , you can even skip it.
  3. Instead of cooker ,you can boil in pot too.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
