RED VELVET CAKE

Hi All,
RED VELVET CAKE!! This cake took me almost 15 days to finalize a recipe😊
I wanted to make red velvet cake for valentines day so I tried it with a recipe one week before valentines day but it was a flop 😟.Though the cake was super moist and yummy but the cake sticked to pan and broke in two pieces 😤.Finally I made cake pops with entire cake.
Then for one week I searched for recipe , discussed with many FB group friends and many good people helped me.I should thank Home Bakers guild friends who generously shared the recipe links,And finally I nailed it 😊😊.The cake was super soft , rich and bright red.Cream cheese frosting added more richness to cake.
I followed the recipe from floursandfrostings.com and joyofbaking you tube video too ( and of course I altered the recipe a very little 😝)
The recipe is not so tough but making this red velvet cake is really very exciting and fun too.

The easy recipe is as below,
YIELDED ABOUT : 30 SLICES.

INGREDIENTS :
All purpose flour /Maida – 125 gms / 1 1/4 cup.
Cocoa powder – 2 tablespoon.
Salt – 1/4 tsp.
Butter – 60 gms / appx will be 1/3 cup.
Sugar – 150 gms / 3/4 cup.
Eggs – 2 nos.
Vanilla – 1 tsp.
Buttermilk – 1/2 cup / 120 ml.
Red food colouring – 2 tsp.
Vinegar – 1 tsp.
Baking soda – 1 tsp.

METHOD :
  1. Pre-heat oven to 170”C for 30 mins.
  2. Grease your baking pan with butter and dust with flour.
  3. Sift Maida , cocoa powder , salt together for even mixing.
  4. In a bowl mix buttermilk and red food colouring.
  5. Using electric beater or food processor beat butter until creamy.
  6. Then add sugar ,vanilla and beat till sugar mixes with butter well.
  7. Followed by egg , add one egg at a time and beat until bubbles, likewise add all the eggs one by one and beat.When done empty the contents from food processor to a wide bowl.

  8. Add 1/4 quantity of buttermilk mixture and 1/4 quantity of flour mix to egg mixture and mix well.
  9. When mixed well ,add another 1/4 quantity of buttermilk mixture and 1/4 quantity of flour mix and mix well , repeat the same process until entire buttermilk mixture and flour mix are added and mixed well.
  10. In a small bowl add vinegar and baking soda . once baking soda is added to vinegar the mixture puffs up ,immediately add the mixture to cake batter and mix well.

  11. Immediately transfer the contents to your greased baking pan and bake till tooth pick comes out clean (it takes around 30 mins).

  12. When done remove from oven and let the cake come to room temperature .Invert the cake from pan and refrigerate for 1 hour before frosting.
  13. Cream cheese and red velvet cake combination is amazing , so if possible try cream cheese frosting ( recipe here) , else you can try buttercream or fresh cream frosting too.
  14. After 1 hour of refrigeration slice the cake into two halves , frost with your favorite frosting and enjoy.
NOTES :
  1. Make sure all ingredients are in room temperature.
  2. For buttermilk ,I beat 1/4 cup curd and 1/4 cup milk ( you can replace milk with water too) or you can add 1 tsp vinegar to 1/2 cup milk and let it rest for 5 mins before using.
  3. As I don't have electric beater , i used food processor ( mixer) .If you have electric beater pls use it for easy job.
  4. Once batter is ready ,start baking immediately .Don't make the batter wait for long time without baking.
  5. After adding cake batter to baking pan , tap the pan twice and also using your knife draw gently over the batter . These process help to release the air from batter and prevents cake from forming air bubbles while baking.
  6. Baking time may vary from oven to oven , my oven took exactly 30 mins.So after 30 mins of baking check with tooth pick and extent baking accordingly.
